Four Pillars’ limited-edition Whiskey Barrel Gin is here, the second drop in the Whiskey Barrel Series and a bottle with some serious pedigree.

What began as a high-proof, rare dry gin has undergone an extraordinary ageing process, spending over a decade in barrels, maturing to perfection.

The making of Whiskey Barrel Gin

The journey started in Chardonnay barrels, where the gin matured for at least nine years. The team aged some batches even longer to develop deeper, more complex characteristics over time. They then transferred the gin into ex-bourbon barrels from the iconic Four Roses Distillery in Kentucky for another two years.

Known for their mellow spice and caramel-rich flavour profile, the Four Roses barrels added a new layer of warmth and depth to the spirit.

Taking to Instagram to promote the release, master distiller Sarah describes how the limited-edition drop came about.

“When the opportunity came up for us to get our hands on some Four Roses bourbon barrels, we jumped at the chance. Four Roses has been around since the 1880s, all the way through prohibition. Their home is Kentucky, which is the home of bourbon in the USA. The gin itself is rare dry gin, aged for complexity, richness and a beautiful honey colour.”

The final product is a cask-strength gin that combines the crispness of classic juniper and citrus with a rich blend of caramel and sweet spices with subtle hits of dried fruit and vanilla. Designed for savouring in a beautiful whisky glass, it’s a bold and complex spirit.

Where to buy it

Only 2,000 bottles of this release are available worldwide, so if you’re keen to try it, move fast.

In Australia, you can buy it in 700ml bottles for $175. Find it at the Four Pillars Healesville Distillery, the Sydney Four Pillars Lab or at the Four Pillars online store. The remaining bottles will be heading to the US and selected duty-free retailers at Sydney, Melbourne and Changi airports.

  • Sounds absolutely intriguing, and I do love limited edition anything in particular alcoholic spirits. I’d be interested to know how many bottles out of the original 2000 remain available for purchase. The best thing about this is the mention of caramel rich flavour profile. Even still, Wouldn’t be able to afford the price point sadly.

My friends and I generally have both these types of alcohol at our parties so this will be an interesting one to try at our next gathering. The price tag hopefully suggests it taste more premium and we can enjoy on the rocks.

  • I have grown partial to the darker liquors as I have gotten older especially whiskey. I sued to favour vodka in my twenties but whiskey seems to hit the spot better these days and warm the tummy! This variety sounds so good and I love how it is so beautifully presented, it would make an amazing gift.


  • Well, this sounds really yummy. So interesting that they used the different barrels to mature it, and deepen its flavour. I love that. Mellow spice and caramel rich flavour, with an added layer of warmth and depth – that sounds really incredible. In a batch of that size, only 2000 world wide, it sounds like a great gift.


  • This description sounds absolutely wonderful and having the gin maturing for a decade would most certainly up the price. Unfortunately, I do have champagne tastes on a less than a beer income, so I would have to give this a miss at the price. Love to have the opportunity to taste it one day though.

  • I am having trouble imagining the layers and flavours of this. Even reading the title you almost say rum bwfore stumblijg over gin. I always find it so interesting how the process to develop flavours is even thought of. And with this sort of timeline did they have any flunks before or how were they so confident?

  • This sounds pretty amazing and right up the alley of my husband. He is both a gin and whisky lover, so would really enjoy this unique spirit.
    I love my gin and tonic, but prefer the lighter styles.
    I’ll definitely have to look out for this though. Birthday in August could be perfect!

  • Oh this sounds absolutely divine! I find gin to me the smoothest alcoholic drink for me, but always love the aroma of brown liquor. The notes and flavours of this sounds really lovely. I’ll have to have a squiz online and see if there are a few bottles still kicking around, and hopefully they start brewing a few more barrels for next time

  • I love a classic G&t and I love a whisky so when those two worlds collide they can create something really special. I love that four pillars are always trying new things and ex Chardonnay barrel and ex four roses bourbon barrel would be such a unique blend of flavours, I might have to head to Healesville to try it myself


  • I have never really enjoyed drinks on the rocks, I have always preferred spirits mixed or in a cocktail. Think drink sounds absolutely delightful and something I would very much enjoy drinking. I have really gotten into making cocktails recently and I think this would go beautiful with a few that I make regularly.
